Step 1
Wash kale & remove leaves from tough portions of stem. Roughly chop into approximately 1 inch pieces.
Step 2
Cut bacon into 1/4 inch chunks, place into pan over medium heat with small amount of olive oil. Cook until fat is rendered & bacon is crisp.
Step 3
Once bacon is crisp, add 3 whole garlic cloves, several shakes of crushed red pepper flakes (if desired), & about 1/3 of the chopped kale to pan. Increase heat to medium high. Stir & continue to fold kale over until wilted. Once wilted, continue to add rest of kale in batches, until all kale is wilted.
Step 4
Add vinegar, tomatoes, & chicken broth. Bring mixture to boil, then cover & reduce to a low simmer for about 30 minutes until kale is to your desired tenderness.
