Instructions

Step 1
Sautee garlic and shallot on low in a couple tablespoons olive oil, or use some of the oil in the Sundried tomatoes jar for extra razzle dazzle, until translucent.
Step 2
Throw in tomatoes and cook for a few mins and season with lots of salt and pepper
Step 3
Add in 1/2 cup coconut milk/cream or measure with your heart. Cook on a low simmer until it thickens a little and once your pasta is done add in 1/4 of the pasta water.
Step 4
Add in any other fun things like Olives
Step 5
Grate in parmesam cheese
