Matcha Cookie Sandwich
Matcha Cookie Sandwich with Matcha Cream Cheese & Strawberry Jam Filling
Ingredients
65g butter *soften
45g powdered sugar
25g condensed milk
110g all purpose flour
15g almond flour
9g matcha powder
1/8 tsp salt
Filling
45g butter *soften
25g powdered sugar
90g cream cheese *soften
3g matcha powder
Cream all ingredients until smooth.
Strawberry jam
For the cookies
In a medium bowl cream butter, powdered sugar and condensed milk until smooth. Add the flour, almond meal, matcha powder, salt and mix until combined and dough forms. Roll out the dough. Cut out dough and shape in desired pattern. Carefully transfer the cookies to prepared baking sheets. Bake at 155c pre-heated oven for approximately 12-15minutes (depending on the thickness of the cookie) Remove from oven, allow to cool completely. Take the regular shaped cookie, pip the cream cheese filling in the middle of each cookie. Cover with the other cookies on top, fill with strawberry jam and enjoy!
