Instructions
Step 1
Start by making deep gashes on the chicken drumsticks. This will help the marinade penetrate the meat better.
Step 2
Rub lemon juice and salt all over the drumsticks. Leave them to marinate for 30 minutes. After 30 minutes, drain any excess liquid.
Step 3
In a bowl, combine ginger garlic & chilli paste, full-fat yogurt, double cream, white pepper powder, garam masala powder, green cardamom powder, turmeric, and eggs. If desired, add dried fenugreek leaves for extra flavor.
Step 4
Mix all the ingredients well to form a smooth marinade.
Step 5
Coat the drumsticks thoroughly with the marinade, making sure they are well coated. Leave them to marinate for at least an hour. This will allow the flavors to infuse into the chicken.
Step 6
Prepare live charcoal for smoking. Place the live charcoal in a small bowl or foil tray and heat it until it becomes red hot.
Step 7
Create a well in the center of the marinated drumsticks and place the hot charcoal in it. Drizzle a little bit of oil on the charcoal to create smoke.
Step 8
Cover the bowl with a lid or aluminum foil and let the drumsticks sit in the smoke for about 5 minutes. This will infuse a smoky flavor into the kebabs.
Step 9
Preheat the grill to 180°C (350°F).
Step 10
Place the marinated drumsticks on the grill and cook for about 50 minutes, turning occasionally, until they are cooked through and have a slight char on the outside.
Step 11
While the drumsticks are grilling, prepare the basting mixture. In a small bowl, mix melted butter, chopped coriander, and lemon zest.
Step 12
After 50 minutes of grilling, brush the basting mixture onto the grilled drumsticks, making sure to coat them evenly.
Step 13
Grill the drumsticks for an additional 5 minutes, allowing the basting mixture to melt and create a flavorful glaze.
Step 14
Remove the drumsticks from the grill and transfer them to a serving platter.
Step 15
Serve the Chicken Tangdi Kebabs hot, garnished with fresh coriander leaves. Enjoy!

Note: You can adjust the cooking time according to the size and thickness of the drumsticks. Make sure the chicken is cooked through and reaches an internal temperature of 165°F (75°C) for safety.
