Instructions

Step 1
Heat olive oil in a large skillet over medium heat. Brown the ham chunks on all sides, for about 5 minutes. Transfer to the slow cooker.

Add the onion, carrots, celery, and garlic to the skillet and cook until softened, about 5 minutes. Scrape up any browned bits from the bottom of the pan.

Add the cooked vegetables, chicken broth, water, potatoes, bay leaf, thyme, and pepper to the slow cooker. Stir well.

Cover and cook on LOW for 6-8 hours, or until the potatoes are tender.

Season with salt to taste. Remove the bay leaf before serving.

Garnish with chopped fresh parsley, if desired.

For a thicker soup, mash some of the cooked potatoes with a fork before serving.
