Instructions

Step 1
•Season salmon with salt and pepper. •In a skillet over medium heat add olive oil and place salmon skin side down. Cook until golden, about 5-7 minutes per side. Remove from the skillet. •In the same pan add shallot, garlic and ginger. Cook for 2-3 minutes, until shallot have softened. •Add in red curry paste and cook until the paste is fragrant, about a minute or two. •Pour in coconut milk, add fish sauce and sriracha and bring to a light simmer. Squeeze in lime juice. •Add spinach and cook until wilted. •Return salmon to the pan. Spoon sauce over salmon and serve with rice, limes and top with cilantro
