BUFFALO CAULIFLOWER DIP

BUFFALO CAULIFLOWER DIP⁣ ⁣ Ok, even if you’re not vegetarian this dip is SO GOOD. It’s a lighter alternative to buffalo chicken dip and perfect way to sneak some veggies in when you’re snacking. And if you’re vegan, you can just replace any of the dairy ingredients with your favorite nondairy version! ⁣ ⁣ What you need ~⁣ -1 head of cauliflower cut into small florets⁣ -1/2 of a red or white onion, finely diced⁣ -1 cup of Franks red hot (or less if you’re sensitive to spiciness)⁣ -1 cup of shredded cheddar cheese. I usually use sharp cheddar but mild is good too⁣ -1/2 cup sour cream or Greek yogurt ⁣ -1 tsp garlic powder⁣ -1/2 tsp black pepper⁣ -1/2 tsp salt⁣ -1 8oz block of cream cheese, really soft and cut into cubes ⁣ ⁣ What you do ~⁣ -Preheat oven to 400 and roast cauliflower in oil and seasonings of your choice for 30 minutes. Change temperature of oven to 350 when cauliflower is done⁣ -Put cauliflower in a large pot over low heat⁣ -Add in onion, hot sauce, cheddar cheese, sour cream or Greek yogurt, seasonings and mix well⁣ -Add cream cheese and combine⁣ -Remove from heat and put in an oiled 8x8 glass pan. You can top with more shredded cheese⁣ -Bake at 350 for 35 minutes ⁣ ⁣
