Smoked Pork Belly Burnt Ends

Instructions

Step 1
Cut pork belly into 1 ½” squares
Step 2
Season each cube with any brand of All-Purpose BBQ Rub (make sure to get all sides) inside of an aluminum foil pan to avoid any mess (NOTE: Do not use a BBQ rub that is specifically intended for beef. It will include too much pepper and salt for these pork bites)
Step 3
Spray down cooking rack with non-stick oil spray (to keep the pork belly bites from sticking) and arrange pork belly cubes, leaving a little bit of space between each piece of meat so that it can start developing a bark
Step 4
Preheat CampChef smoker for 15 minutes
Step 5
Put CampChef smoker on High Smoke (225 degrees) (NOTE: DO NOT set smoker to 275 degrees like Malcolm does in his video. It will burn them up! Different smoker with different timing)
Step 6
Sit the cooking rack with pork belly cubes right on the grill grate and let the smoker go to work. It’ll take about 2.5 - 3 hours to develop the right color on the outside, then it’s time to tenderize. (Note: Make sure to check progress once every hour and rotate the orientation of the tray(s) to ensure even doneness)
Step 7
Carefully remove the cooling rack from the pit (use some gloves) and place each burnt end into an aluminum foil pan.
Step 8
Cover the burnt ends with ½ cup of brown sugar and a good drizzle of honey.
Step 9
Slice up 1 ½ sticks of butter and scatter around the pan. Cover the pan with foil and return it to the smoker.
Step 10
Continue to cook at 225 degrees for another 1 ½ - 2 hours (Optional: remove after 1 hour, give everything a good stir, and return to smoker)
Step 11
After 1 ½ - 2 hours, you’ll want to test a couple. Put on a pair of gloves and squish one in between your fingers. It should have some texture but overall feel extremely soft. I didn’t bother to test the internal temp but if I had to guess it should be somewhere in the 205⁰ ball park. Remember we want them to almost melt in your mouth!
Step 12
Remove the pan from the smoker and move the pork belly cubes over to a separate aluminum foil pan to apply the Pork Belly Glaze
Step 13
Combine all ingredients of the Pork Belly Glaze in a small pot and simmer over medium heat until smooth.
Step 14
Drizzle the Pork Belly Burnt Ends with the glaze and gently toss to coat all sides.
Step 15
Set the burnt ends back in the cooker for about 5-10 minutes (just long enough to caramelize) and you’re ready for the most amazing bite of BBQ you’ve ever experienced!
