Instructions

Step 1
Place chunks in container and pour your water over them.
Step 2
Bring to a rolling boil and turn down temperature to a simmer. Process until at least 1/4 of the liquid is gone. Avoid high temperature. Turn off and cover.
Step 3
Note that it is ready to drink immediately. Do not add sugar. May add maple syrup or honey if needed.
Step 4
When you take a cup of chaga, replace with same amount of fresh water (May add extra) and bring liquid up to a slow simmer for 15 minutes every day. Every other day is okay too. This keeps the liquid from going bad. Crock pots work very well. Whether you use a stainless steel pan or a crock pot, you can keep your liquid in your container of choice, as long as you follow the prior steps. You do not have to refrigerate if you care for your chaga beverage this way.
Step 5
Chaga beverage has a lifetime of at least 4 to 12 weeks or when the liquid is no longer a dark color.
Step 6
Important note: take a tablespoon or two to test at first. Start off with a half cup, may work up to 2 to 3 cups daily.
Step 7
When you are ready to make a fresh batch, do not throw the chunks away just yet! Use enough alcohol (100 proof of vodka or brandy) to cover chunks, keep in a warm dark place. Shake jar everyday. Age for 3 to 4 weeks. Strain and store in a glass jar out of light. Now you have a tincture that has captured additional constituents of the chaga. You may add 25 to 50 drops of this to a cup of chaga from the new batch. You may also take the tincture on its own daily.
