SCRAMBLED EGGS

These high protein breakfast burritos might just be my new fav breakie!! add any filings you like but don’t skip the sauce 😮‍💨 Ingredients: 4 x wraps or tortillas 6 eggs 1 tsp butter 2 tbs plain 200g short cut bacon 1 avocado, sliced 1/4 Red onion, sliced 1 cup spinach/rocket Sauce: 1/4 cup plain yopro 1-2 tbs chipotle or hot sauce Pinch each of salt, smoked paprika, onion & garlic powder Method: 1. Cook the bacon in the oven, airfryer or pan until crispy. 2. Meanwhile, mix the sauce ingredients together in a bowl and spread over each wrap. 3. Scramble the eggs (see Gordon Ramsay’s method below). 4. Assemble the burritos with the fillings and wrap up. Serve cold or warm, optional to crisp up in a pan or sandwich press. SCRAMBLED EGGS: 1. Crack the eggs into a saucepan (don’t whisk) and add 1 tsp of butter. 2. Place the pan on high heat and stir continuously with a spatula. Break up the eggs and scrape the bottom of the pan. 3. After 30 secs, take the pan off the heat and keep stirring for 10 secs (stops the eggs from overcooking). Put the pan back on the heat and repeat the process for 3 mins. 4. Take off the heat and mix in 1-2 tbs of YoPro (to make them extra creamy) and season. Macros (serves 4): 363 calories P 30.8g C 11.2g F 19.5g
