Step 1
Reconstitute shiitakes in a half quart of cold water for 4-5 hours.

Meanwhile, add curry leaves, bay leaves, chicken stock, tomatoes, onion, garlic, and pork bones to a large pot. Simmer until meat is falling off bone, about two hours.
Step 3
Add entire contents of mushroom quart to pot. Season to taste with salt, pepper, cayenne, and msg.
Step 4
Remove pork neck bones (chef snacks!) and any large leaves or stems from pot. Blend and strain soup. Return to pot and bring to a simmer.
Step 5
Add pasta and turn off heat right away. Stir in baking soda. Pasta will continue soaking up liquid as it cools, so best to wait a couple hours before inhaling.
