Step 1
Heat a 15-inch skillet over medium heat. When it’s hot, melt the ghee in the skillet, then add the broccoli and onions. Sauté for 5 to 8 minutes, until the vegetables are tender and a little browned.
Step 2
While the veggies cook, empty the noodles into a colander and rinse them with fresh water. Shake off the excess water and add the noodles to the skillet. Sauté for 5 minutes, mixing the noodles with the veggies, then spread them evenly in the skillet.
Step 3
Make 4 wells in the noodle-and-veggie mixture, then crack the eggs into the wells and sprinkle everything with the salt.
Step 4
Use a spatula to spread the egg whites around in the noodles without breaking the yolks. Then let everything cook undisturbed until the egg whites are cooked through, about 8 minutes.
Step 5
Remove the skillet from the heat and sprinkle with the sliced green onion and everything bagel seasoning. Drizzle the coconut butter over the eggs and serve hot!
