Chicken Wings - SHISH TAWOOK RECIPE!

Shish is a turkish word meaning skewer & tawook also spelt taouk means chicken. Welcome to Ep 5 of the series where everything gets skewered! Middle Eastern Spiced Chicken Wings cooked over charcoal.

Instructions

Step 1
1. In a large mixing bowl, whisk together ALL marinade ingredients until smooth. Or just dump it all over the chicken wings and mix well!
Step 2
2. Add the chicken wings to the bowl and toss to coat them evenly with the marinade. Cover the bowl with plastic wrap and refrigerate for at least 2 hours or overnight.

3. Preheat a bbq grill or cast iron ridged griddle pan to medium-high heat. 180c if you are using the oven.

4. Thread the chicken wings onto skewers.
Step 5
5. Grill the chicken wing skewers and flip every couple of minutes until the chicken has a nice even char and the chicken is cooked. By constantly flipping the chicken wings, you will achieve an even char, whilst keeping the chicken wings juicy.

6. Remove the chicken wing skewers from the grill. Use caution when taking the chicken shish tawook off the skewers. It's hot!!

MY TOP TIPS FOR GRILLING
Step 8
🔸️ Try & avoid grilling the chicken wings directly on Grill grates. The Yoghurt based marinade has a tendency to stick. To avoid sticking, leave each side for a few minutes before turning.
Step 9
🔸️ Charcoal too HOT 🔥 After dumping the lit charcoal in your bbq, wait 5 mins before starting to grill your chicken wing skewers. Keep your vents closed to dampen the heat. *You need to use judgement here as it will depend on the charcoal you are using.
