Middle Easter Chicken Kebab (Shishtawook)
Delicious, juicy, and so easy to put together. Marinate & cook to enjoy this good stuff or marinate and freeze for later! I grilled these, but you can bake them too.
3.5 lbs chicken breast
1.5 tsp aleppo pepper
1 tbsp garlic powder
1 tbsp onion powder
1 tbsp 7 spice
1/2 tbsp coriander powder
2.5 tsp salt
1/2 tsp black pepper
1/2 tsp-1 tsp turmeric (for color)
1/2 tbsp paprika
1/2 tsp ginger powder
6 garlic cloves
1 red bell pepper
1/3 bunch of parsely
Zest of 1 lemon
Juice of 1 lemon
Jalapeño, to taste
1 large roma tomato
3 tbsp yogurt
1.5 tbsp mayo
3 tbsp olive oil
To a food processor add the garlic, bell pepper, tomato, parsley, yogurt, mayo, lemon juice and zest & jalapeño if using. Blitz until completely puréed. Cut the chicken into 1 inch cubes, then add the marinade on top. Add all the spices and massage it into the chicken well. Its best to marinate the chicken for atleast 6
hours but it works in just 1 hour as well. Add onto skewers, grill on a medium high heat, covered for 15-20 minutes, while rotating every few minutes. Alternatively, soak your wooden skewers for a minimum of 30 minutes in cold water before loading the chicken and placing the skewers on a wire rack and baking it covered at 450 for 35-45 minutes or so, while rotating.
