HIGH PROTEIN SPINACH ARTICHOKE DIP🤩🤩

INGREDIENTS:
1 can artichokes, drained and diced
1 shallot, finely diced
3/4 cup low-fat plain Greek yogurt
3/4 cup low-fat cottage cheese
2 cups frozen spinach chopped
3/4 cup mozzarella cheese
3 Tbsp grated parmesan cheese
2 cloves minced garlic (or 1/2 tsp garlic powder)
Salt and pepper to taste
Mix all ingredients together (set aside half of the cheese to put on top) in a medium bowl and transfer to an 8x8 baking dish. Top with the remaining mozzarella and Parmesan cheese. Bake for 25-30 minutes at 375F, and broil for 2-3 minutes prior to serving to get the cheese brown & melty. Makes 5-6 servings. Serve with tortilla chips, crackers, and your favorite veggies😍😍😍
