Crispy Fried Fish
🤤The best “Fish&Chips” you’ll ever eat 🐟 Recipe 🇬🇧/🇷🇴
Fish:
- 350g salmon
- 180g sea bream fillet x2 pieces (or sea bass)
- 400g white flour
- 5g dry yeast
- 580 ml beer (can be replaced with the same amount of sparkling water, but increase the yeast with 2g)
- 2-3 rosemary sprigs (leaves)
- 2-3 fresh thyme sprigs (leaves)
- zest from 1/2 lemon
- salt and pepper to taste
Sauce:
- 7-8 picked cucumbers
- 4-5 small shallot
- 3-4 garlic cloves
- 1 teaspoon Dijon mustard
- 1 1/2 teaspoon whole-grain mustard
- 400g mayonnaise
- 1 1/2 bunch of parsley
- Salt and white or black pepper to taste
Process:
1. In a bowl mix well the flour, dry yeast, beer (or sparkling water), and strain the mixture.
2. Add to the flour mixture the finely chopped rosemary and thyme, the lemon zest, salt, and pepper, then stir to combine. Cover with plastic foil and put in the fridge.
3. Sauce: blend all the ingredients mentioned in the sauce, then pour into one bowl and put aside.
4. Heat the oil in a pan. Clean the fish’s skin (if it is not yet clear), and cut it into medium-sized pieces, into your favorite shape (cubes or slices)
5. When the oil is hot, remove the dough from the fridge. Soak the fish in it and fry it on both sides until you get a nice golden color.
6. Drain the fish of excess oil. Spread the sauce on a platter, then place the fish and serve immediately. Enjoy your meal!
