Instructions

Step 1
Marinate the beef in a mixture of soy sauce, rice vinegar, cornstarch, and sesame oil for 10 minutes. While the beef marinates, slice the bell peppers and scallion.
Step 2
Heat oil in a large skillet over high heat. Add the beef and cook until browned, about 2-3 minutes. Remove from the pan and set aside.
Step 3
Add the bell peppers to the pan and cook for 2-3 minutes, until slightly softened.
Step 4
Add the beef back to the pan with the peanuts and red pepper flakes (if using). Toss to combine and heat through. Garnish with scallions and serve immediately.
