Ingredients

12carrots
medium, chopped

2onions
large, chopped

6celery ribs
chopped

2cloves garlic
minced

2potatoes
small, chopped, optional

5 cupswater

1 cupbeef broth

1 x 28 ozcan diced tomatoes
undrained

64 ozV8 juice

3 cupsfrozen cut green beans

3 cupsfrozen peas

3 cupsfrozen corn

15 ozcan pinto beans
drained

15 ozcan red kidney beans
drained

4bay leaves

2 tspsalt

3 Tbspdried parsley

1 ½ tspdried marjoram

½ tsppepper

½ tspground cumin

½ tsporegano

1 ½ tspdried thyme

¾ tspbasil

4 lbsBeef chuck
Instructions
Step 1
Cut chuck roast into small pieces and cook in oil until done. Then set aside.
Step 2
Sautee carrots, onions, celery and garlic in oil.
Step 3
In a large soup kettle add all ingredients and bring to a boil.
Step 4
Reduce heat and simmer for 1 1/2 hours.
Step 5
Allow to cool and remove bay leaves.
Step 6
Eat and store leftovers in freezer.
