Super versatile and possibly one of the easiest desserts every. 6-7 plums cut into 8ths or 2 cups of fresh berries or 3-4 apples. ¼ cup of sugar 2 tbsp of corn starch Zest of a lime. Add juice of the lime too if you’re using pears or berries. 1 store bought short crust pastry 1 egg 2 tbsp flaked almonds 1 tsp sugar granules Icecream to serve. Mix the plums, sugar, corn starch and zest well! Prep your short crust by taking out of freeze for 10 minutes. Cut the short crust into a rough circle. Spoon fruit into the center but leave the juice behind. Leave about 2-3cm of pastry bare around the circumference. Fold the pastry up like a tight little hug for your fruit. Burst the pastry with a beaten egg. Cover with some almonds and a little sugar. Bake at 200C or 180c fan force for 40-50 minutes until almonds and pastry are golden.
