Matcha orange blossom cake
Matcha. Orange Blossom. Passion Fruit. Olive Oil Cake. 🎂 🍵
My version of a love cake- with some added caffeine to keep you up while you prowl through these STREETS
This cake has sort of become a tradition, made every year under new circumstances- and for the first time, I got to make it for
who cares for me unlike any other. The most special of connections, and baked goods alike, come from the careful intentionality, time, and quality of ingredients used— and they’re even better when shared with someone you adore, including yourself. So here’s how to make my favorite love cake.
1/4 cup oat milk
1/4 cup lemon juice
2 tbsp lemon zest
2 eggs (or egg substitute), beaten
1/2 cup olive oil
1 tbsp orange blossom water
1 1/4 cup AP flour
2 tbsp matcha powder
1 tsp baking powder
1/8 tsp baking soda
1/2 tsp kosher salt
3/4 cup white sugar
Orange blossom CC Frosting
6 oz cream cheese, softened
6 tbsp softened unsalted butter
2 1/2 cup powdered sugar
1 tbsp orange blossom water
1/4 tsp cardamom
Pinch of flaky salt
Process:
1. Preheat oven to 325F. Grease and line a 8inch cake pan.
2. In a bowl, whisk together flour, matcha, baking soda/powder, salt, and sugar. Set aside.
3. Mix together lemon zest, juice, and milk. Let sit for 5 mins. Beat eggs (or egg substitute like JUST egg) until frothy. Combine milk and eggs. Whisk in olive oil and heat until light and airy. Mix in orange blossom water
4. Make a well in the bowl of the dry ingredients and pour in the wet. Whisk until combined and fluffy.
5. Bake in the middle rack for 25-35 mins until a toothpick comes out clean when inserted in the cake. Remove and let cool on a sheet tray.
6. Make CC frosting: Cream together CC and butter until combined. Add powdered sugar 1/2 cup at a time. Add salt, cardamom, and orange blossom water and cream until combined. If you want a thicker CC frosting, add an additional 1/2c powdered sugar. Add more cardamom or orange blossom to taste.
7. Garnish with cc frosting.
