Instructions
Step 1
Heat the oil in a large saucepan over medium heat. Add the onion, carrots, and celery. Sauté until translucent (3 to 5 minutes), stir, and add lentils.
Step 2
Cook for 1 minute, add the coriander and season with salt and freshly ground pepper to taste. Add the stock, stir, and increase heat to high.
Step 3
When the stock begins to boil, reduce heat to medium-low and stir.
Step 4
Cover and allow to simmer for 30 to 45 minutes, or until lentils are tender.
Step 5
Taste and adjust salt and pepper if necessary. Blend with an immersion blender or in blender and serve warm with croutons.
