Instructions

Step 1
In a blender, blend the spinach, almonds, cheese, olive oil, water, and salt and pepper to taste, taking care not to liquefy (the pesto should still have some texture).
Step 2
In a medium-large pan over medium heat, warm the pesto for a couple of minutes.
Step 3
Meanwhile, in a large pot of boiling salted water, cook the ziti until al dente, drain, and transfer to the pan with the pesto. Quickly sauté for a minute, adding pasta water as necessary to bind the ingredients.
Step 4
Plate in four bowls. Finish with more cheese, a pinch of cayenne, a few fresh spinach leaves, and a drizzle of oil.
