Instructions

Step 1
Add almonds coconut flour the zest of one lemon 2 tbsp of no sugar sweetener syrup or sweetener of choice and 1/2 cup melted vegan butter . Mix until smooth then press into a lined small baking dish . ( note if the mixture is fry add a little more vegan butter ) chill the crust in the fridge

Step 2
Add almond milk the juice of three lemons ( 1/2 cup approx ) vanilla 3 tbsp sugar free syrup or sweetener of choice( note sweeten to taste add less or more depending on how tangy you like it and what sweetener you are using) and cornstarch turmeric or yellow food coloring then whisk until smooth . Add 4 slices of lemon peel then heat on medium heat whisking all the time until mixture gets thick and bubbly . Remove the peel then stir in one tbsp of vegan butter and let the mix cool down for 5 minutes

Step 3
Pour the lemon curd over the crust then refrigerate for an hour or until set . Slice into bars and enjoy
