A great, egg-free cake mix with delicious banana flavour. The ingredients can be easily substituted.

Instructions
Step 1
Preheat oven to 180C.
Step 2
Combine milk, margarine, vanilla, mashed bananas, flour and sugar in a bowl. Mix with a wooden spoon until mixture is completely moist.
Step 3
Pour into greased pan or muffin tray. Top with extra banana pieces.
Step 4
Bake for 30-40 minutes for a loaf.

Step 5
The mixture can stay moist for a long time in the oven, so cooking time can vary.
Step 6
Skewer test periodically near the time limit until it comes out clean.
Step 7
This recipe uses an extra banana instead of using an egg.
Step 8
You can also substitute the third banana for a green apple, for an apple and banana mixture. This makes it extra moist, so the cooking time is slightly longer.
Step 9
Vanilla can be omitted and it will still be delicious. Experiment by adding desiccated coconut, dried fruits and nuts, or oats.
Step 10
If making muffins bake for 25 minutes instead.
