Instructions
Step 1
Whisk together the butter with the two sugars until well combined using a stand mixer or electric hand mixer
Step 2
Add the egg and whisk for a further 45 seconds until well combined and mixture is smooth then whisk in the vanilla
Step 3
In another large mixing bowl, whisk together the flour, baking powder and cornstarch to combine then pour the dry mixture into the wet mixture and mix well to form a dough
Step 4
Add the chocolate and fold through the dough
Step 5
Seal the bowl and place in the fridge for 2 - 3 hours or overnight
Step 6
Preheat oven to 165C fan forced
Step 7
Mix together the peanut butter and sugar in a separate bowl
Step 8
Take the dough out of the fridge, let sit for 10 minutes to soften then scoop 12 balls out onto a lined baking tray
Step 9
Flatten out then scoop about 1 tbsp of the peanut butter mixture into the middle then wrap the dough around the pb as seen in the video
Step 10
Press the rest of the chocolate chips into the dough. If it’s a hot day the dough might soften too much whilst handling. You may need to pop them in the fridge for 10 or so minutes so they are easier to handle.
Step 11
Bake for 10 - 12 minutes until slightly browned on the outside of the cookies

Allow to cool for 5 minutes and enjoy!!
