½ tablespoonextra virgin olive oil

1bell pepper
diced

1 tablespoonminced garlic

2 cupscoleslaw cabbage mix

½ cupfrozen corn
Tofu
Instructions
Step 1
Preheat the oven to 400°F.
Step 2
Add the Parmesean, corn starch, garlic powder, sugar, soy sauce and water to a bowl and mix to combine.
Step 3
Dice tofu and mix with sauce until fully coated.
Step 4
Transfer tofu to a lined baking sheet and bake for 30 minutes.
Step 5
Remove the tofu from the oven. In a separate bowl, toss the tofu chunks with the BBQ sauce. Return the tofu to the baking sheet and bake for another 10 minutes.
Step 6
Meanwhile, add olive oil to a frying pan and heat to medium-high. Add diced peppers and cook until softened. Add cabbage mix and corn. Cook for a few more minutes until softened as well.
Step 7
Once tofu is cooked, add it, along with the rice, to the pan and stir until combined.
