Sausages
2 Tbspolive oil
1 lbchicken sausage
1red onion
sliced
75mlwater
2 tspthyme
60gbrown sugar
75mlapple cider vinegar
salt
pepper
Mash
Instructions
Mashed
Step 1
SAUTE garlic. CANCEL. Add potatoes and enough boiling water to cover them. Add a generous pinch of salt.
Step 2
PRESSURE COOK, HIGH, 12 minutes. Quickly release pressure.
Step 3
Drain potatoes and mash with butter and cream.
Step 4
Stir in thyme, salt, and pepper.
Step 5
Remove from pot and keep warm.
Sausages & Onions
Step 6
Drizzle oil into the pot. SAUTE sausages until a nice crust develops. Remove and keep warm.
Step 7
Add onions and a splash of water to deglaze. Saute onions until soft. Season with salt, add water and thyme, then press CANCEL.
Step 8
Place sausages on top of onions and PRESSURE COOK, HIGH, 2 minutes. Quickly release pressure and press CANCEL. Remove sausages and keep warm.
Step 9
SAUTE onions with brown sugar and vinegar until reduced and sticky. Season to taste.
Step 10
Serve.
