Chinese Vegetable Salad With Kiwi Fruit

Ingredients
5 servings

1cucumber

0.5 headgreen cabbage
thinly sliced

2 cupschow mein noodles

½ cupKiwi fruit
peeled and sliced, fresh

½ cupraw peanuts
or unsalted macadamia nuts

¼ cupfresh cilantro
chopped

½ cuprice wine vinegar

⅓ cuphoney

2 tablespoonssesame seeds

1 tablespoongreen onions
diced

1 tablespoonfresh ginger
grated

1 tablespoondark sesame oil
1 teaspoonherbal salt substitute

1 tablespoonlow sodium soy sauce
or tamari
Instructions
Step 1
Peel the cucumber. Have it lengthwise, remove the seeds and slice the flesh into half-moons. Place in a large bowl.
Step 2
Add the cabbage, noodles (if using), kiwis, peanuts or macadamia nuts and Cilantro. Mix well.
Step 3
In a second bowl, whisk together the vinegar, honey, sesame seeds, onions, soy sauce or tamari, ginger, oil, and salt substitute. Pour over the salad and mix well. Let marinate for 1 hour before serving.
