Ingredients

10 pieceschicken breast
THINLY sliced, can sub with chicken thighs
⅓ cupolive oil
¼ cupgrated cheese
2 tspchili
crushed, Calabrian jarred
½ tspsalt
3 clovesgarlic

1lemon juiced

1 cupitalian seasoned breadcrumbs
3 Tbspbutter
melted
1 loafsliced bread
3tomatoes
large
0.25red onion
sliced thin
¼ cupfresh basil
3 Tbspolive oil
1 Tbspred wine vinegar
½ tspsalt
olive
grated cheese
chili pepper
salt
garlic
lemon juice
oregano
butter
Instructions
Step 1
Preheat oven to 170
To a large baking sheet add, olive oil, grated cheese, Calabrian chili pepper, salt, garlic, lemon juice and oregano. Use a fork or small whisk to mix the ingredients. Coat each chicken piece in the mixture as shown.
Step 2
To a medium sized bowl add Italian seasoned breadcrumbs and melted butter. Mix well. WARNING! Most pre seasoned breadcrumbs contain salt. Adding any additional salt will make the dish too salty.
Step 3
Top each piece of chicken with the breadcrumb mix and bake for 20 minutes or until the chicken has an internal temp of 165F. Cook time may be slightly longer or shorter depending on the thickness of your chicken. If you want crispier breadcrumbs, broil for the last 2 minutes max.
Step 4
Remove the stem and slice tomatoes into wedges. Use a mandoline to slice the red onion. Please don’t do as I do! Use the mandoline guard. Add olive oil, red wine vinegar and salt. Mix well then top with fresh basil. DO NOT MIX IN THE BASIL UNTIL YOU ARE READY TO SERVE
