½ cupmash potatoes
550gbread flour
or all purpose
10ginstant yeast
3 Tbspsugar
2 tspsalt

The Buns
Step 1
If you have left over mashed potato, perfect! If not peel and slice two potatoes. But onto boil for 12 - 15 minutes until soft. Drain, add a tbsp of butter and a splash of milk. Mash until smooth and leave to cool for 15 - 20 minutes before adding to the other ingredients.
Step 2
Begin with taking all the wet ingredients out of the fridge half an hour before starting to bring up to room temp (milk, eggs and butter).
Step 3
Add to a mixing bowl along with the mashed potato, sugar, salt, flour and yeast. If you have a stand mixer, start the mixing on low speed and then bring up to medium until the dough has formed nicely. Then turn back down to low and leave for 10 - 12 minutes until the dough is smooth with elasticity, you should be able to stretch it without it breaking.
Step 4
If you don't have a stand mixer, bring the dough together with a spoon and then on a floured surface knead the dough for 10 - 12 minutes until you have the same result.
Step 5
Place in a oiled bowl to stop it from sticking, cover and leave to rise at room temp for one hour.
Step 6
Once the dough has risen, squish out the air (very satisfying) and place on your board. Cut the dough into 10 equal shapes. Then fold the edges in and roll (as seen in the video) to make a circular shape. Flatten with your fingers to make a bun shape and place on a baking tray with baking paper. Repeat until all are the same size and cover, leave for one more hour.
Step 7
Melt 1 tbsp of butter and add 1 tsp of honey to make the glaze.
Step 8
Pre heat the oven to 190c/375f.
Step 9
Brush the glaze over the buns and place in the oven for 16 - 18 minutes until golden brown.
Step 10
Once removed from the oven, immediately brush over some more glaze and then leave to cool for 15 minutes.
Step 11
These are delicious on their own, but also make the perfect burger bun.
The Chicken

Crack and beat the two eggs.
Step 13
In a separate bowl, add the flour and seasonings. Give it a mix.
Step 14
Slice the chicken in half and place in the egg wash, followed by the flour, shake off the excess and then fry in oil at 175c/350f for 6 - 8 minutes until golden brown (internal temp 74c/165f).
Step 15
Season with salt straight out of the oil.
Step 16
Mix the sauces together for the sauce, slice the lettuce and pickles, assemble and enjoy!
