This recipe will make delicious, crispy, thin pancakes.
Peking duck pancakes are known as Chun Bing/春饼 meaning spring pancakes.

Making The Dough
Step 1
Add the flour to a bowl, then the hot (nearly boiled) water. Combine and knead into a smooth dough, we want this soft and not sticky so adjust accordingly. (Different flour brand, different absorption.)

When you're finished making the dough, allow it to rest for 30 minutes covered, brush with some of your olive oil.

Seperate the dough evenly into 16 pieces, ball, then press down into roughly 3 inch discs
Step 4
At this point we can pre heat our frying pan to a medium heat. Stack up every two pieces of dough. (one on top of the other). Roll out the FIRST double layer dough into a very thin disc 6-7 inches

Transfer into your heated pan. Cover with a lid and leave to cook over medium heat. When you start to see air forming, flip the pancakes over.

While you're cooking your current pancake, you can roll the next to be ready for the pan. Once you finish cooking, separate the double layered pancakes into single pieces. This needs to be done while they’re warm. Cover cooked pancakes with a kitchen towel.
