Have you ever tried a scallion pancake?
The scallion pancake is also known as green onion pancake, or βCong You Bingβ
.
It is a Chinese savory, unleavened flatbread made with a scallion paste. Unlike Western pancakes, it is made from a dough instead of batter.
The pancake is then pan-fried, giving it crisp edges and a soft and chewy texture. The layers in the dough make up the interior, contributing to its flaky texture.
I donβt know of anyone who has tried Cong You Bing and dislike it, in fact it is one of Taiwanβs most popular street food! So you should most definitely give it a try if you havenβt already! ππ

400g All-Purpose Flour
240g Water
100g Sourdough Discard (optional)
10g Oil
8g Salt
Scallion Paste :
1 cup chopped scallions
1/4 Cup Flour
1/2 Cup oil + 1 Tsp Sesame oil (heated)
A dash of white pepper
1/2 Tsp Five Spice Powder (you can skip it if you donβt have it)
A pinch of salt
Dipping Sauce :
Sliced red and green chilli
1 Tsp Black Vinegar
1 Tbsp Light soy sauce

β‘οΈMix all the ingredients together and give it a quick knead until everything comes together in a nice cohesive mass
β‘οΈ Let the dough rest for 30 min
β‘οΈ Divide into 8 equal portions and rest for 10 min
β‘οΈ Roll each dough ball into a rectangle and apply the scallion paste. Roll the rectangle up like a Swiss roll and let it rest for 10 min.
Roll the Swiss roll into a coil and flatten it as shown in the video. Let the dough relax for 15 min.
β‘οΈ Flatten the dough and roll into a circle as flaf as possible
β‘οΈ Fry it in a hot pan until it browns nicely on both sides.
Best enjoyed warm because extra flaky and delicious!
