Instructions
Step 1
Put the rice in a bowl, cover with hot stock and leave for at least 30 minutes, Drain, but keep the stock for later.


Step 2
Squirt some olive oil in a heavy frying pan, add the pork strips and fry until brown. Remove pork strips and keep one side.


Step 3
Squirt some more olive oil and add the onion, garlic and chili. Cook until the onion is golden.




Step 4
Add rice and fry until golden

Step 5
Add Mushrooms and Red Pepper and fry for 5 minutes


Step 6
Add Tomato and stock and cook until all the liquid has been absorbed.


Step 7
Add Pork Strips, peas and coriander 5 minutes before end of cooking.



Step 8
If softer rice is preferred stir in a little more stock after 20 minutes and continue cooking until the extra liquid is absorbed.
