Step 1
Preheat your oven to 450°F (230°C).
Prep

Line a baking sheet with parchment paper or lightly grease it.

In a large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.

Add the cold, cubed unsalted butter to the dry ingredients. Using a pastry cutter or your fingertips, work the butter into the flour mixture until it resembles coarse crumbs.
In a separate bowl

combine the cold buttermilk and honey. Pour this mixture into the dry ingredients and stir until just combined. Be careful not to overmix; the dough should be slightly sticky.
Step 6
Turn the dough out onto a floured surface and gently knead it a few times until it comes together. Do not knead too much; you want to keep the biscuits tender.
Step 7
Roll out the dough to about 1/2-inch thickness. Use a round biscuit cutter or a glass to cut out biscuits from the dough. Press straight down without twisting to get clean edges.
Step 8
Transfer the cut biscuits to the prepared baking sheet, leaving a small gap between each one.

Bake in the preheated oven for 10-12 minutes, or until the biscuits are golden brown and have risen.

As soon as you remove the biscuits from the oven, brush the tops with melted butter to add extra flavor and a beautiful shine.
