Instructions

Step 1
Heat olive oil. Crush garlic. Put garlic, chilli flakes and basil in the oil. Put on low-medium heat and let it simmer for 1-2 mins until basil is wilted. Remove from the heat

Heat butter and 1 tbsp olive oil. Slice the onion in half, and put it in the oil. Simmer for 2-3 mins until it starts turning golden brown

Carefully stir in tomatoes and break them into lesser pieces with a spatula if needed. When tomatoes start to boil, decrease the heat to low, season with salt, close with a tight lid and let it simmer for 20-25 mins

When basil infused oil has cooled, put it into the food processor for 20-30s until the texture is smooth
Step 5
Add basil mixture to the pot, stir well and let it simmer, uncovered, for 10 more minutes. If the sauce is too acidic, add 1/2 tsp baking soda
Step 6
Cook spaghetti. Preserve some pasta water. Add spaghetti so the sauce. Add pasta water if it's too thick. Serve with parmesan
