Tomato & Preserved Lemon Fish

Instructions

Step 1
1. Bring pot of salted water to a boil

2. Over low- medium heat in a saucepan, add olive oil, garlic, butter and onion and allow to cook for a few minutes.

3. Add cherry tomatoes and diced preserved lemons to the pan and let cook until they begin to burst, stirring every now and again.

4. Once they have broken open and sauce is thickening, add wine, some preserved lemon liquid and basil to the pan and combine. Allow to cook over low heat for about 5 minutes

5. Boil pasta according to directions. If using the fresh made Pici pasta recipe, they will only need about 3 minutes.

6. Drain pasta water into sink, keeping a small amount in the pot. Pour sauce from pan into pasta pot and mix, allow to sit and thicken
Step 7
7. Add seasoned fish to sauce pan with olive oil, butter and a bit of preserved lemon liquid and allow to cook until done.
Step 8
8. Serve fish over pasta with fresh cherry tomato pieces, fresh basil and a dash of sea salt.
