Braised Pork Chops and Fondant Potatoes with Onions in Sauce

Instructions

Step 1
Peel the potatoes and cut the ends off and then slice them in half, width wise. Discard the ends.
Step 2
Peel and cut the onions in half and then cut them into thick slices.
Step 3
Crush and peel the garlic.
Step 4
With butter and olive oil on medium-high heat, fry the ends of the potato slices until golden and crispy. Transfer to a large baking dish.
Step 5
Fry the pork chops on medium-high in the same pan until well seared on each side. Transfer these to the baking dish with the potatoes.
Step 6
Add a little butter and oil to the same pan and fry the onions and garlic on medium heat until translucent and slightly browned. Pour the fried onions and garlic on top of the pork chops and potatoes.
Step 7
Mix the apple juice with the mustard. Add the thyme, salt, pepper, allspice and bay leaf to the baking dish. Be generous with the salt, there's a lot of meat and vegetables in the dish. Pour the apple-mustard on top and then add chicken stock until everything is covered.
Step 8
Cover and bake in a 300° oven for 1.5 hours. Then remove the cover and bake for another 1/2 until the meat is fork-tender.
