Mini Meatloaves in Brownie Pan

So back in March 2023 my 8y/o had been under the weather & I was either going to make chili or mini meatloaves one night. He voted! I made the meatloaves and winged the whole thing by using up what we have. โค About 1 lb Ground beef โค3-4 cloves garlic ๐Ÿ’œ 1/2 of red onion, diced ๐Ÿงก4 strips of orange pepper, diced โค4 strips of red pepper, diced ๐Ÿ’š1 cup of frozen mirepoix ( celery, carrots, white onion) โค2 cubes of frozen tomato paste ( I had opened a can a few months ago & put the remainder in an ice cube tray) ๐Ÿ’› 1Tsp of yellow mustard ๐Ÿ˜‹ 1Tsp of Worcestershire Sauce ๐Ÿ’š 1 TBSP of homemade Italian seasoning ๐Ÿ’›1 egg Mix until combined & put in brownie pan Topped w/ bottom of the jar Classico Sweet sausage & peppers pasta sauce Threw it in the preheated oven @350 for 35-40 mins. Let rest for 5 mins Made plain macaroni on the side ( I topped mine with parmesan cheese and green olives.) We were excited for Meatloaf Sandwiches the next day!

Instructions

Step 1
Mix until combined & put in brownie pan

Topped w/ bottom of the jar Classico Sweet sausage & peppers pasta sauce
Step 3
Threw it in the preheated oven @350 for 35-40 mins. Let rest for 5 mins
Step 4
Made plain macaroni on the side ( I topped mine with parmesan cheese and green olives.)
