Creamy Sausage Pasta Bake

This delicious sausage pasta bake is full of flavour and creamy goodness, and yet relatively low in fat. It's super easy to make and an ideal option for a family mid-week meal.

Instructions

Step 1
Pre-heat the oven to 180⁰c. Pour the oil into an oven proof dish and place in the pre-heated oven. Whilst the oil is heating up, prepare the onion and pepper.
Step 2
Slice the courgette length ways and generously cover with salt. Leave to one side for 10 minutes and then rinse thoroughly. This will remove excess moisture from the courgettes
Step 3
Once the oil is hot, add the red onion and pepper to the dish and cook for 10 minutes. Meanwhile, prepare the remaining vegetables.
Step 4
Once the onion and pepper have softened, add the remaining vegetables to the dish, along with the pasta and sausages.
Step 5
Pour the chicken stock into the dish, ensuring it more or less covers the pasta. Cover the dish with foil and bake for 35 minutes, stirring half way through.
Step 6
Remove the dish from the oven and stir in the creme fraiche. Serve immediately.
