Instructions
Step 1
Cook rice according to packet instructions. Transfer to a heatproof bowl. Add 1/2 tsp sesame oil and stir to combine. Stand for 5 minutes to cool. Add avocado and onion, then stir gently to combine.
Step 2
Meanwhile, combine honey, soy sauce and sake in a ceramic dish. Add chicken, turning to coat. Heat remaining oil in a large frying pan over medium heat. Add chicken and marinade. Cook, turning occasionally, for 15 minutes or until chicken is sticky and cooked through. Transfer to a board. Slice.
Step 3
Divide rice mixture among bowls. Top with chicken and pickled ginger, and sprinkle with sesame seeds to serve.
