Instructions

Step 1
Pre-hear oven to 350F/177C. Grease a rounded or loaf pan with olive oil.
Step 2
In a large bowl, combine dry ingredients: flour, baking powder, baking soda and salt. In separate bowl combine sugar and orange zest, mix well and set aside.
Step 3
In a third bowl combine wet Ingredients: eggs, yogurt, olive oil, orange juice and vanilla extract. Once well mixed, add orange zested sugar, and combine until smooth
Step 4
Mix wet ingredients into dry, and mix until just incorporated. You want to make sure you leave large clumps in the batter!! Do not over mix :)
Step 5
Pour batter into greased pan, and place in oven to bake for 40-45 minutes or until a toothpick inserted in the center comes out almost clean.
Step 6
Let cool until room temperature, dust with powdered sugar or keep as is. Serve yourself a cup of hot mint tea or coffee to pair, and enjoy!
