Ingredients

½ cupwhite quinoa
organic

1 cupWater

170gchickpeas in brine
organic

100gfeta cheese
organic

2 Tbspextra virgin olive oil
spanish, organic

2 Tbsplemon juice
100%, organic

1cucumber
medium, seeded and chopped

¼ cupred onion
chopped

¼ cupflat-leaf parsley
finely chopped

¼ cupmint
finely chopped

ground black pepper
organic

⅛ cuppistachios

himalayan salt
natural, to taste, organic
Instructions
Step 1
To cook the quinoa: Combine the rinsed quinoa and the water in a medium saucepan. Bring the mixture to a boil over medium-high heat, then decrease the heat to maintain a gentle simmer. Cook, uncovered, until the quinoa has absorbed all of the water, about 10-15 minutes. Remove from heat, cover, and let the quinoa rest for 5 minutes, to give it time to fluff up.
Step 2
In a large serving bowl, combine the quinoa, chickpeas, cucumber, onion, mint, parsley, feta cheese, pistachios, Lemon juice and olive oil
Step 3
Toss until the mixture is thoroughly combined. Season with black pepper and salt to taste.
