Instructions
Step 1
To a large pot, add water, chicken, shallot, ginger and Knorr Chicken Powder. Boil the chicken for about 45 minutes or until thoroughly cooked. Remove the chicken and let it cool in ice water, then pat dry.
Step 2
To a small bowl, add turmeric and hot oil then mix. Brush on a layer of the turmeric oil onto the chicken. This will give it a nice color. Shred the chicken into a bowl. Add Knorr Chicken Powder, black pepper, onions, Vietnamese mint, lime juice and Thai chili. Toss together.
Step 3
Wash and drain jasmine rice, then add turmeric oil cook on white rice setting.
Step 4
Serve with turmeric rice, chicken salad, a bowl of the chicken broth and Vietnamese fish sauce (nuoc cham)
