Instructions

Step 1
Whisk together the water, honey, olive oil, and yeast in a large bowl.
Step 2
Add the flour (making sure it is 500g) and the salt. Mix well and it will resemble a sticky dough.

Cover and let rest for 15 minutes
Step 4
After 15 minutes, wet hands with water and stretch and fold the dough. Pull from the outside of the dough, stretch up, and fold over a few times. Cover and rest for another 15 minutes
Step 5
After 15 minutes, stretch and fold again and cover and let rest for 1.5 hours.
Step 6
While it is resting, melt butter and oil in a pan. Then add the garlic and parsley and salt to taste. Simmer for about 2 minutes. Set aside to cool.
Step 7
After it has rested in the bowl for 1.5 hours, pour the dough into a well-oiled and parchment lined 9x13 pan. Put about 2/3 of the garlic butter on the dough with half of the cheese. Fold the dough into a loaf shape and flip over. Cover and wait for another 1.5 hours. Preheat over to 420F
Step 8
Once it has proofed, add extra oil onto the top of the dough and dimple the dough with your fingers. Place in preheated oven (420F) for 15 minutes, bottom rack.
Step 9
Take out the bread and put the rest of the cheese on top. Put back in the oven for 8 minutes until the cheese is baked on. Spread the rest of the garlic butter onto the hot bread. Enjoy!
