Veganes carbonara

➢ For the carbonara sauce add the following ingredients in a food processor and mix until they have a
creamy consistency:
- 80 g cashew nuts (Soak the cashew nuts for 15 min in hot water)
- One red bell pepper (Bake for 20 min at 180oC)
- 100 g oat milk
- 1 tsp liquid smoke (link) or if you do not have, use 1 tsp smoked paprika powder
- 2 tbsp apple cider vinegar
- 2 tbsp nutritional yeast (link, you can also find this in føtex or meny)
- 1/2 tsp garlic powder
- 1 tsp onion powder
- salt and black pepper as you like
➢ Cook 350 g pasta of your choice. Keep one cup of the pasta-water, which you can add in the sauce if
needed to achieve the consistency you like.
➢ Add the sauce to the pasta.
➢ You can also add baked/grilled portobello mushrooms.
➢ You can add 200 g of chickpeas or butter beans (either cooked and drained or from a can). It is a
great way to include more legumes in your diet and enrich in protein and fiber.
