Pasta is one of the most famous italian dishes. It is easy to make and most of the times all the ingredients are sitting in the fridge. This sauce is made with mushrooms, speck, gorgonzola and saffron.

Step 1
As first thing, prepeare the mushroom and slice them as thick as you like. Heat a pan with some olive oil and add some garlic. As soon as the oil is hot, remove the garlic an ease down the mushrooms.
Stir form a minute or two and them add the white wine, mix and add chopped parsley, salt and pepper. Let the alcohol evaporate and let the mushrooms on the heat until they are soft. Remove from the heat and keep aside.

Before to move to the next step, put a large pot on your stove with water so it is going to be ready soon.

In the same pan where you just cooked the mushroom, ease down the speck cut into small pieces or cubes.
Stir it into the pan, at low heat for two minutes and then keep it aside with the mushrooms.

Step 4
Keep using the same pan where you prepeared the speck and the mushrooms. Take a spoon or two of the hot water you are making ready to cook the pasta and put it into the pan. Add the gorgonzola cheese so it can start melting.

When the water in the pot is boiling, ease down the pasta and let it cook ad long as indicated on the box.

While the pasta is getting ready, you can continue preperaing the sauce. Now the gorgonzola cheese should be melted so you can add the cooking cream and saffron and increase a bit the heat. If the sauce starts getting to dense, you can add another spoon of the water from the pasta pot. One minute before the pasta is ready add the mushrooms and spek to the sauce.

When the pasta is ready, put it into a strainer and then into the pan with the sauce. Stir for two minutes and then serve with some crumbled wallnuts on top.
