375gdried black beans

4garlic cloves

5coriander roots

salt

1 Tbspseasoning

800gspare pork ribs

Yuca
cassava, sliced into wedges

Instructions
Step 1
Wash and rinse black beans thoroughly, at least 4 times. Sort through beans to find any rocks or bad beans. Throw them out and place the remaining beans in a large cooking pot with garlic and coriander roots. Fill with water and bring to a boil, then simmer for 45 minutes to an hour.






Step 2
Continuously check on the beans, when they’ve begun to soften but are still crunchy add in pork and yuca - if still frozen, add yuca earlier. Season with salt and Vegeta.




Step 3
Whilst the soup is cooking, combine coriander and onion with the lime juice. Leave in fridge.



Step 4
Add eggs depending on preference. Alternatively, boil prior to soup in a separate pot of boiling water. Add boiled eggs without shells into the soup right at the end.

Step 5
Serve with cooked rice, sour cream, coriander mix, crumbed feta and largely diced avocado. Enjoy.
