One Pan Creamy Lemon, Garlic and Parmesan Salmon

Instructions

Step 1
Brown the salmon on either side in a deep pan for 1-2 minutes until coloured. Remove and set to one side
Step 2
Add the leek, shallots, and a pinch of salt in the same pan to sweat down for 5 minutes.
Step 3
Add in the sliced courgettes and garlic and sweat for another 5 minutes.
Step 4
Sprinkle with 1 tbsp flour and mix, add in the drained beans and pour enough water in to nearly submerge them but not quite.
Step 5
Add the chicken stock cube and a crack of pepper, pinch of salt and allow to simmer to slightly thicken on a gentle heat for 5 more minutes
Step 6
Mix then add in the zest of 1 lemon, the juice of 1/2 lemon, 30 gms grated Parmesan and 2 tbsp crème fraiche. Taste and season with more salt and pepper if needed before adding back in the salmon fillets and allow to gently simmer for 3 mins until the salmon is cooked.
Step 7
Serve and finish with a scattering of fresh parsley, some extra lemon zest and Parmesan if needed
