165gPoultry-Skinless Chicken Breast
uncooked

65gBrown Rice
Uncooked Weight

150gMixed Green Vegetables
Your choice, non starch

6 tspSoy Sauce
Gluten Free

Coconut Aminos
or 2 tsp

½ tspolive oil
Instructions
Step 1
Use a ratio of 1 rice to 2 water. Add water to a pot and place over medium heat.
Step 2
When boiling, add rice and allow it to come to a gentle simmer
Step 3
Cover the saucepan and reduce heat to low. Allow to simmer until rice is tender and water is evaporated (~15 minutes)
Step 4
Meanwhile, pre-heat fry pan with olive oil. Add diced chicken (optional: ginger and fresh herbs) to pan and toss.
Step 5
After about 8 minutes, add soy sauce/coconut aminos and vegetables. Continue to cook until vegetables have softened and chicken is well cooked.
Step 6
Place the chicken stir-fry on top of the rice, and enjoy.
