Good fiber and protein kick to my early morning coffee time. They taste sweet so I don't crave sugar in my coffee. These cookies help me avoid the heavy fats and even carbs in most breakfast bars. Yum!

Instructions
Step 1
Preheat the oven to 350°F. Line a large sheet pan with parchment paper.
Step 2
Combine all ingredients in a mixing bowl and stir until mixed well. Diving the mixture evenly into 8 balls. Flatten each ball into ~1/2" thick rectangles or circles on the parchment paper (smooth top).
Step 3
Bake the cookies for ~50 minutes or until the bars are lightly browned on top.
Step 4
Remove from the oven and rest for 5 minutes. Remove cookies to a wire rack to cool.
Step 5
Store in fridge and use within two weeks. For longer storage place in freezer.
